Roasted Asparagus: Date Added: 22 Jan 2011

4 pounds asparagus, trimmed and peeled
2 tbsp melted butter or olive oil
1 tsp salt
1/4 tsp freshly ground pepper

Cooking Instructions

Heat oven to 450 degrees.

Toss asparagus, butter, salt and pepper on a jellyroll pan, arrange in a single layer.

Roast 15 to 18 minutes until tender.

Makes 8 servings.

Roasting the asparagus instead of boiling or steaming is an easy way to keep its tender-crisp texture.

Prep time: 15 minutes. Roasting time: 15 to 18 minutes.
